1/2 cup white whole wheat flour (King Arthur)
3/4 cups unbleached all purpose flour (King Arthur)
3/4 cup raw sugar
1 tsp baking soda
2 tsp pumpkin pie spice
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp salt
1 1/2 cups canned pumpkin pie filling or pumpkin puree (for a sweeter taste, use pumpkin pie filling)
2 tbsp vegetable oil
2-3 large egg whites
1 1/2 tsp vanilla extract

Directions:
Preheat oven to 350°. Line a muffin tin with paper liners and lightly spray liners with oil for easy removal.
In a medium bowl, combine flours, sugar, baking soda, pumpkin spice, nutmeg, cinnamon, and salt with a wire whisk. Set aside.
In a large bowl mix pumpkin puree, oil, egg whites and vanilla; beat at medium speed until thick. Scrape down sides of the bowl.

1 scoop of peanut butter
1 sugar Pam spray
8 strawberries
2 bananas
Directions:
With a blender (magic bullets are perfect for this), blend the oatmeal, cinnamon, vanilla, eggs, and peanut butter. Spray a large skillet with Pam spray and let it warm up on the stove at a low temperature. Drizzle a light layer of the crepe mix into the skillet and tilt the skillet to either side to spread the mix all over the skillet. Leave the skillet on the stove for 30 seconds to a minute at a low temperature, then flip and do the same with the other side. Slice the strawberries and bananas into small pieces and place them on top of a crepe and roll the crepe so that it holds all the fruit in place. Serve and eat!

Ingredients:
1 box of whole wheat rotini
1 package of low fat ground turkey (97/3)
1 red bell pepper
1 serrano pepper
1 large Prego marinara sauce container
Montreal steak seasoning
garlic salt
Directions:
Boil whole wheat pasta in a large pot. Meanwhile, simmer the ground turkey in a skillet. Mix with Montreal steak seasoning and garlic salt (don’t be afraid to be pretty generous with this). While the turkey simmers, finely chop the bell and serrano peppers and then mix them in with the turkey. Once the meat is fully cooked, add tomato sauce to the turkey and peppers until it becomes a thick sauce. Keep simmering while the pasta cooks. Strain the pasta, add the sauce and mix!
