Egg White Omelette

4 egg whites
Pico Rico (recipe posted below)
1 chicken breast
salt and pepper
pam spray
2 tbsp mild salsa
1/2 avocado

Directions:
In a small bowl, whisk eggs until fluffy. Spray pam on a small skillet and cook sliced chicken breast. Season with salt and pepper to your liking. On a separate skillet, spray pam and drizzle egg mixture into a thin layer and flip occasionally until fully cooked. Layer cooked chicken on half the omelette and add Pico Rico. Fold omelette over itself so that the chicken and pico are completely enclosed. Sprinkle omelette with salt, pepper, and salsa, and add sliced avocado for extra flavor. Serve with potatoes and toast!
