Ingredients:
2 cups of boiling water
½ cup of cracked wheat
1 cup minced fresh parsley leaves
½ cup minced fresh mint leaves
½ cup finely chopped yellow onion
2 roma tomatoes diced
1 cucumber skinned and diced
2 tablespoons olive oil
5 tablespoons lemon juice, or to taste
¼ teaspoons salt
*Option to add Serrano pepper for a spicy flavor
Great with peta chips, peeta bread, or naan.
Directions:
1. In a large mixing bowl pour the cracked wheat and cover with boiling water. Depending on the size of the wheat, it mayt take 20-60 minutes to crack. If it’s taking longer, keep adding hot water. Strain wheat before combining with vegetables.
2. Finely chop parsley, mint, onion, tomatoes and cucumber.
3. Once the wheat is soft and drained, combine with veggies and add olive oil, lemon and salt.
4. Refrigerate and serve cold as a side salad or as a healthy snack or appetizer with tasted whole wheat peeta or naan. Enjoy J
