Balela Salad

Ingredients:
2 (15 oz ) cans garbanzo beans, drained and rinsed
2 (15 oz ) cans black beans, drained and rinsed
1/2 cup chopped (packed) fresh mint
1/2 cup (packed) fresh cut parsley
1/2 cup chopped onion
1 pint grape tomatoes finely chopped
1/2 chili serrano pepper without seeds
garlic powder
1/4 cup olive oil
4-5 tbsp lemon juice
6-7 tbsp apple cider vinegar
salt and ground black pepper to taste



Directions:
1. In a salad bowl, mix garbanzo beans, black beans, mint, parsley, onion and tomatoes.
2. Add serrano pepper, garlic powder, olive oil, lemon juice and apple cider. Mix well and serve!

*This can be served as a salad or salsa, along with pita chips or whole wheat chips.
