Sopa de Albondigas

Ingredients:

1.5-2 lbs ground turkey
1/2 cup uncooled white rice
1 tsp grount cumin
2 cloves garlic, mined
Salt and pepper
1 medium onion, chopped
4 stalks of celery, chopped
4 carrots, chopped
3-4 red potatoes, cubed
1 (9oz) can tomato sauce
Fresh cilantro, chopped limes

Preparation:
Mix ground turkey with rice, cumin, and garlic. Add salt and pepper to taste. Roll meat mixture into 1-1/2 inch meatballs. Bring 3 quarts of water to boil. Gently place meatballs into the boiling water while you chop all the vegetables. Add onions, celery, carrots, potatoes, and tomato sauce. Cover and reduce heat to low and boil for about 1 hour until vegetables are soft and rice in meatballs are tender. Serve hot garnished with cilantro and wedge of lime.
